Gems are socketed at a Gem Forge, not in your inventory menu. The six regions documented before Cinder’s Cradle each have three; their Night Sanctum forge has the highest local cap.

Caps by region

Wiki bands: Springlands about 10–12, Revelwood 15–18, Nomad Highlands 20–22, Kindlewastes 30–32, Albaneve Summits 35–40, Veilwater Basin 41–50. Fuel is Archaic Essence, mined in Shroud Lairs, dropped by Shroud Gazers, or refunded when you recover a gem. The forge inside the Night Sanctum is the strongest of that region’s three.
